Anchovies in olive oil from Conservas Catalina

The cannery Catalina is a family business that began in 1999. Throughout these years the company has been developing a range of products selected among the best, and what is very important, worked with the expert hands of the women of Santoña.

Their star product is the anchovy of the bay of biscay. Every spring the factory begins a period of boiling which extends up to the month of June, the month in which ends the season of anchovy in the Cantabrian Sea.

They buy fish at the auctions of the guilds to take them to their factories, where it begins a delicate and care process. The anchovies are descabezan, then salted and kept resting on salting between six and nine months. After this time, which is essential for their maturation, to come to work with them one at a time, stripping away the skin and a portion of the salt. The hands of craftsmen women of Santoña in the wash and dry and then filetearlas with care, and put them in cans and jars covered with olive oil.

Their anchovies are made with fishing, carefully selected, coming from the catches of spring in the Cantabrian Sea. The elaborated of traditional way sobadas hand by hand and packaged one at a time.

Recently, Conservas Catalina has joined Singapore Awards 2019 and won a gold and silver medal in this competition:

These “Selección Premium” anchovies have been prepared from carefully selected fish captured in spring in the Cantabrian Sea. This is done meticulously by hand in the traditional manner and the anchovies are handled one by one; they are of large size and their colour, taste, texture, and precise saltiness distinguishes them to the palate.

In addition to the anchovy, our other product is the bonito of the north in oil. We were the first company to market sliced bonito, which is an exquisite choice as accompaniment to any dish. The bonito takes over from the anchovy in July, which is when we select only the best examples from the fish markets to prepare our sliced bonito, bonito belly, and bonito loin.
