DFJ VINHOS SA : Largest Portuguese Producer of Highest Quality Wines

0
DFJ VINHOS SA - Singapore Newspaper

DFJ VINHOS was created in 1998, has 250 ha of vineyards, mostly in the Lisbon region, exporting more than 99% of its production of 8 million bottles to 50 countries.

Eng. José Neiva Correia is the owner of the company and the chief winemaker, producing wines since 1974.

José Neiva Correia had two training ports : Gesenheim in Germany and Bordeaux in France. This allowed him to discover different methods of production, to compare them and to be inspired later to make his own wines. Today, he is still a consultant for four competing companies (50 million liters).

At all times, José Neiva Correia, a descendant of several generations of winegrowers, has followed the family tradition. However, he has never stopped doing research, inventing ways to modernize his work and improve the quality of wines, or creating solutions for winemakers from here and elsewhere. His products respond to modern issues, both from the point of view of consumers and producers.

For 35 years, he worked with the engineer Octavio Pato, one of the best Portuguese winemakers in the 60s, 70s and 80s. With this experience and his laboratory work, José Neiva Correia learned how to analyze wine, water, earth, leaves, etc., and all this has allowed him to deepen his knowledge. He is particularly distinguished thanks to a patent he has filed for a method of disinfecting corks.

Quinta da Fonte Bela-Cathedral of the Wine

Located in Vila Chã de Ourique – Cartaxo, 80 km north of the city of Lisbon, it is a unique centennial property. Most of the buildings belong to the so-called “Cast-iron architecture” used in the second half of the 19th century by the followers of Eiffel. All the facilities were designed by engineers of the atelierof Eiffel, who at the time were in Portugal to design public works, such as the Santa Justa elevator in Lisbon and the D. Luís bridge in Porto. The owner of the Quinta at the time (António Francisco Ribeiro Ferreira) took advantage of the presence of these engineers and commissioned the plans of what would become the center of his agricultural activity. The first building came to be the cellar completed in 1897. The exterior architecture is also unique in Portugal because it is characteristic of southern France and Balearic Islands that were certainly the origin of engineers.

Also known as the Cathedral of Wine, Quinta da Fonte Bela is composed of several buildings, among which we find the headquarters of the DFJ where are the offices, a vinification center, a bottling line, warehouses, a cellar with capacity for 9.3 millions of liters, cooperage, laboratory and living room. All in a total of 17,197 m 2   and a covered area of 8,063 m 2 .

DFJ WINES received 564 awards in 2019 including 38 trophies and 197 gold medals. Since 2010 we won 3145 awards.

“The Eng. José Neiva Correia, owner and chief winemaker of the company, stated that: “We are very proud because it is an excellent recognition of the effort of our working group that every day strives to get the best price and quality in all our wines. They aren’t an end in themselves, but they are a strong recognition of our work, helping those who work with us around the world to get the message to their customers of the excellence of our work.”

And very recently, DFJ VINHOS SA has been recognized and awarded Fifteen Gold Medal and Seven Silver Medals by Singapore Newspaper Wines, Spirits and Beers Competition:

Weingut Schloss Gobelsburg : Sparkling and Sweet Austrian Wine

0
Weingut Schloss Gobelsburg - Singapore Newspaper

As one of the oldest wineries in Austria, Schloss Gobelsburg has some historical vineyard sites around the castle. Every site has its specialties and particularities with different soil and micro-climatic conditions. From the sun-exposed terraces on Zöbinger Heiligenstein and the Gaisberg mountain to the extensive garden facilities around Gobelsburg castle, the vines are subjected to a wide range of conditions. In accordance with their respective potential, the best possible development conditions are established for every grape variety.

At Schloss Gobelsburg, ecological winegrowing is not just simply en vogue at the moment. The monks of the Zwettl Monastery, who had managed the winery themselves until 1995, used organic fertilizer, abstained from employing herbicides, and endeavoured to reduce the use of plant protectants.

In 1996, the Schloss Gobelsburg Winery was accepted as member of the renowned Verein der Österreichischen Traditions weingüter (Association of Austrian Traditional Wineries). This association was the first in Austria to classify vineyard locations in Kamptal and Kremstal. Some of these – usually locations with a long history – produce wines with great potential year after year and stand out from the other conventional vineyards.

The winery is working vineyards on the banks of the Danube and its side rivers. (Krems, Kampt, Traisen) When you come to the Danube area you will find two archetypes of vineyards. On one side vineyards which are based on dry and mineral which are ideal for Riesling production.

On the other side you will find vineyards that are based on Löss or clay with a good water supply to the vines, which is ideal for Grüner Veltliner. The two grape varieties are complementary and as we have the two opposing structures in our vineyards, we need the two different grape varieties to represent their personalities.

The Appellation System is easy to understand as we are differentiating between three categories of wine:

  •        Regional wines
  •        Village wines
  •        Single vineyard wines (Ried in Austria

Since 1992 we are working on a vineyard classification system that is differentiating between:

  •        Non-classified single vineyards
  •        Erste Lage (1’er Cru)
  •        Grosse Lage (Grand Cru)

In the past 25 years we have been classifying so far 60 vineyards out of 700 as ‘Erste Lagen’. As a Classification of vineyards is a long term project that will take 30 to 40 years, we will only start in 5 to 10 years with the classification of the ‘Grosse Lagen’

All wines of the estate are related to the rich history of the estate, no matter if its white, red, sparkling or sweet wine. The main focus of the production is wines of origin (DAC) in all its different categories. My primary interest is on the different expression of soil which results in a wide variety of different single vineyard wines.

As a speciality, Michael is looking after winemaking philosophies based on the rich history of the estate. This is the fundament of TRADITION Grüner Veltliner and Riesling, which pays homage to the winemaking philosophy of the 19th century. So for these wines we working in the winemaking process in the same way as it was done 200 years ago.

The Pinot Family (Pinot Noir, St. Laurent, Zweigelt) dominates the estates red wines, which are grown on the old Danube river bed, where you find feast size river pebbles like in the Rhone valley.

Sparkling wine and sweet wines are also specialities of the estate, which is rounding up the picture of Austrian wine culture.

Austrian wine has a culture of pairing food and wine. In Austria they enjoy quiet a lot of wine and they normally enjoy wine always together with food. So we as winemakers were forced to produce good food companions. This is why Austrian wine is always dry wine (with the exception of the small segment of sweet wine).

BODEGA PICOS DE CABARIEZO : Artisan Flavors, Liquor that Heats the Soul

0
BODEGA PICOS DE CABARIEZO - Singapore Newspaper

Picos de Cabariezo” has opted  to work in accordance with ancestral distillation methods.

Picos de Cabariezo area has been distilling since 780, using the traditional lebaniega ALQUITARA: the big difference in distillates. Quality and tradition are the key.

The traditional Lebaniega Alquitara is made of copper, a unique container of Arabic origin, which has been used since ancient times to distilled drop by drop, that traditional liqueur that warmed the soul and accompanied it faithfully on so many occasions.

With this heritage and knowledge of master artisan, the distillery is made up of only six typical copper Alquitaras, but with the incorporation of independent temperature control, with which we keep processes even more careful, constant, and very slow, which guarantee our own and high demands.

This is how the `hollejos` (skins, seeds and remains) are distilled from winemaking, once it has finished and the wine is uncovered, that is, it is separated from the `hollejos`. The alcohols are evaporated in the boiler (lower part) and ascending through the ´capotillo` (intermediate part) to condense in the cup (upper part) and flow slowly. In a process of about 16 hours, with an approximate load of 200kg. We only get a poor performance of one liter per hour and a total of about 16 liters for each Alquitara to collect only the best of the best.

Precisely because of its extraordinary quality this schnapps is lately one of the most awarded artisan marc in the country.

BODEGA PICOS DE CABARIEZO defense and interest in this area has made to continue to plant vines, in addition to buying the production from small local producers, contributing to the recovery and care of the older ones that have subsisted, and always looking for the most particular expression of environment.

BODEGA PICOS DE CABARIEZO have recently invested and planted more vineyards, on a mountain slope called Morillas, which was once a smallholding full of small vineyards and family plots, and which they are recovering. Now it is the largest mountain vineyard of this region, under the steep peaks of Peña Sagra, with excellent south orientation and about 12,000 strains of Mencía, Godello and Syrah grapes.

The predominant local grape variety is Mencía, they have splendid centenary vineyards in the area, this is a highly valued and exclusive vine in the world, which is only found in their area, and in Galicia and León. But other varieties such as Syrah and Gewurstreminer have adapted very well, adding particular touches to their wines. In addition, always immersed in experimentation processes, they constantly include and study other varieties and possibilities…

Although they make a small crop of white wine, the largest and most important production is that of red one.  They are author’s wines, unique, with an Atlantic profile and with a clear expression of the terroir. Wines of great quality that in the last years have won good recognition and excellent evaluations obtaining 91 and 92 points in the well-known Peñín Guide 2017, among others.

Very recently, BODEGA PICOS DE CABARIEZO  has joined Singapore Wines & Spirits Awards 2020 and won a gold medal in this prestigious competition:

Scea Château Haut Pougnan - Singapore Newspaper

Scea Château Haut Pougnan is a family estate of 50 hectares located in the heart of the Entre-Deux-Mers, on the slopes of the right bank of the Garonne river, benefiting from a superb limestone and gravel soil.  The east and south slopes are home to red wine vineyards, the western slopes remain the domain of white wines. It is the clay-limestone nature of these soils that makes it possible to obtain very fine wines with a subtle bouquet.

The red wines from Merlots (50%), Cabernets Sauvignons (40%) and Cabernets Francs (10%) reflect the trilogy of the Bordeaux grape varieties. For white wines, Sauvignon (70%), Semillion (25%) and Muscadelle (5%) give them a finesse and a prestigious bouquet. The red, robust, fruity wine has a particularly well calculated tanicity. In a very beautiful dress, it continues to please by its elegance and balance in the mouth.

The white wine is of great finesse and a remarkable bouquet. Entre-Deux-Mers of pleasure and wonderful accompaniment. The rosé wine, with a light robe and a fine nose, finishes on the palate fruity, lively and robust. White wines are tasted young. They go wonderfully with fish and seafood dishes. Rosé wines go well with hors-d’oeuvre or charcuterie. These wines evolve favorably the first two years.

The red wine aged one year in oak barrels flourishes after three to five years. The great vintages age harmoniously in cellar from eight to ten years.

San Marzano Vini S.p.A. : Wine Sharing Beauty, a wine born to celebrate a success

0
San Marzano - Singapore Newspaper

San Marzano is a leading wine producer from the region of Puglia, in the heel of Italy’s boot. The story began in 1962, when 19 vine growers from the village of San Marzano, whose families had farmed the land for generations, came together to follow their dream and founded Cantine San Marzano. Throughout the decades it has grown significantly and now attracts over 1,200 top-quality vine growers.

The vines are cultivated with the utmost respect for the natural rhythm of the vineyard. The native grapes are grown in the beautiful Puglian countryside, where gentle sea breezes, the azure blue skies and sun-kissed vines produce ripe, juicy fruit bursting with flavour.

Using modern vinification techniques, San Marzano produces elegant and clean wines that pay homage to the ancient Puglian wine traditions. This fusion of timehonoured tradition, passion and contemporary craftsmanship, enables the production of wines with distinctive varietal characteristics that reflect the essence of the local terroir.

The team of winemakers is built to create the peculiar and innovative style that makes San Marzano recognizable at the first sip. Caterina Bellanova and Davide Ragusa were born and grew up in Puglia: Caterina represents the exquisite touch essential to create iconic wines, Davide is a young and talented winemaker, he studied Oenology in Florence and developed his practical skills during several harvests also abroad. San Marzano invests in all sorts of young professional profiles in order to obtain the best from them and for them.

San Marzano and the Primitivo. San Marzano has played a central role in enhancing the value and profile of Primitivo producing world-class wines and icon labels. An example, among many, Sessantanni Primitivo di Manduria DOP, result of an intuition of the President, Mr. Francesco Cavallo, who was determined to create a new wine that could express the authenticity of the Primitivo grape in a new and modern interpretation.

Collezione Cinquanta Rosso d’Italia: a wine born to celebrate a success. 2012, fifty years after the foundation of Cantine San Marzano, Collezione Cinquanta (= Collection Fifty) was born. A one-off meant to be wine, only made to celebrate the year, 1962, when 19 growers planted their most ambitious dream. The front label shows all the years from the foundation to 2012, as a visual reminder of the path that led to success.

No vintage, a precious blend of the most typical red varieties of the area, among which Primitivo and Negroamaro stand out, grown on old vines trained in little bushes, the so-called Alberelli (=small trees). Once on the market, consumers really appreciated the experiment to such an extent that they winery decided to make it a permanent project, a pearl of the top-range wines. Even though it has no regional indication, the wine is a compendium of the land where it comes from, Salento, the southern-most subregion of Puglia, being an interesting blend of local red grapes selected over the last best vintages. Gold Medal at 2020 Singapore Awards, it is a powerful red, with a complex bouquet of ripe red fruits and spices, barreled aged for 12 months, well structured and with a stunning balance, achieved by the thorough work of the winemakers with all their expertise.

EACH OF SAN MARZANO’S WINES HOLDS A SECRET: PASSION, BEAUTY, SHARING.

Watanabe Sake Brewery : The Brewery with the Most Smiles in Japan

Watanabe Sake Brewery - Singapore Newspaper
Watanabe Sake Brewery is located in central Japan in a beautiful small town called Hida-Furukawa located in Gifu Prefecture. Stroll past the traditional wooden merchant stalls and the white-walled storehouses, observe the carp swimming in the fresh flowing stream and it is here that we proudly produce our beloved sake. Watanabe Sake Brewery is not big but their sake is world class! They are proud to make many people smile and touch their hearts.

Watanabe Sake Brewery established in 1870, Hourai Sake Brewery is located in “Hida Furukawa” a town nestled in rich, exalting surroundings. Home of Hourai Sake and Cody`s sake.

In 2006, Watanabe Sake impressed an American guy’s soul. One day, an American man named Darryl Cody Brailsford tried Watanabe Sake and was overwhelmed and pleasantly surprised because “The taste I imagined versus the taste I actually tasted was entirely different. It was “fruity”. This moment changed Cody’s life. Cody requested to be apprenticed to Watanabe Sake Brewery and became the first non-Japanese brewer at Watanabe and is known as a Kurabito.

In 2016, Introduce “Awesome Watanabe Sake” to the US market. In the year of Cody’s tenth season in the brewery, he sat down with Watanabe’s president and asked the question “Can we start to introduce the sake to my home country and town I grew up in?” He wants to get people in his home town to know the excellence of Watanabe Sake. He developed a sake best suited to US people. The bottle designed by Cody showcases the excellent taste and fruity aroma of Watanabe Sake. Cody hopes that one day, the US president will drink our sake. This is his passion and dream.

The outer layers of brown rice are removed to prevent off-flavor of sake, and the remaining bran “Nuka” on the grains is washed away. After the rice is soaked in the water to absorb appropriate moisture, it is steamed.

The timing of the soaking process needs to be changed depending on the brands or polish condition of rice as well as the condition of crops that also varies every year. The chief sake brewer therefore determines the timing down to the second.

The flavor of sake is determined by the characteristics of the rice, quality of the water and human touch.
The Watanabe Sake Brewery uses mainly local sake rice and the underflow water of the Hida Alps collected from its own well.

Brewing sake is a unique, creative, and complex process, which differentiates from that of other brewed alcohol beverages existing all over the world. The chief and other experienced sake brewers manage this unique sake production, staying at the brewery from autumn to spring every year. They share beds and meals under the same roof and engage in all aspects of the sake brewing as a close-knit team.

Watanabe Sake Brewery has won more than thirty kinds of prizes in competitions in Japan, Europe and U.S. and this 2019, Watanabe Sake Brewery have been recognized and awarded by Singapore Newspaper Taste Awards.
