Saint-Cels started with creation of the estate in 1970. Lead and succeeded by the two generations of Rouanet Family, Today, the vineyard extended on 80 hectare in the heart of Languedoc, in the middle of the Saint-Chinian appellation, where the perfect varieties of grapes are grown, Grenache, Syrah, Mourvèdre, Cinsault, Carignan, Chardonnay, Roussanne, Colombard, Vermentino to name a few. Their altitude is between 100-350m and plots are mostly on hillsides allowing them to have the best exposure conditions. As the vegetation between pine and “garrigue” completes this landscape.
As a result of a willingness to take bold risks with passion to cultivate and develop, In 2017 Saint-Cels winery began their organic farming.
Mr. & Mrs. Rouanet shared that “ we would have the pleasure of sharing with you all the energy we put every day, every season and in every step to get to the harvest. During each assembly we strive to make wines that we will have fun to tell. When the richness of a terroir follow you, the imagination becomes a “land” without limit, leaving space for the creation of vintages combining pleasure and elegance this is our guiding thread.”
Recently, two of their wines received an awards from Singapore Newspaper and these are the results of a daily commitment, of hard work in the vineyard and in the cellar.

Ploughing, seeding of vegetal covers, trellising, leaves thinning
Treatments in conformity with organic farming requirements, sexual confusion to protect against the worm of the cluster
Manuel and Mechanical harvesting
Vinifications
White wines
Destemming, crushing and direct pressing. Then fermentation in enamelled steel vats at low temperature. racking with care and pressing of the musts.
Red wines
Destemming, partial crushing then traditional vinification (maceration during 2-3 Weeks) in stainless steel vats with pumping over. Alcoholic and malolactic fermentations happened in vats. racking.with care
Rosé wines
Destemming, partial crushing. Rosé wine is obtained by draining a few hours after harvesting. Maceration is really short under temperature controlled in order to get apale colour and preserve aromas. Fermentation in enamelled steel vats
Ageing :
ageing in vats on lees.

White : accurate fining and filtration on earth
Rosé : accurate fining and filtration on earth
Red : no fining, filtration on earth
